Airing Sunday, April 27 at 12:20 PM on Rai 1, the program -hosted by Peppone Calabrese, Livio Beshir, and Margherita Granbassi- will feature one of the region’s most emblematic culinary treasures: Speck Alto Adige PGI, a product that has successfully made its mark on tables around the globe.
Through the voices of local producers, chefs, and passionate experts in nature and regional culture, the episode will explore the harmonious blend of two traditions: the northern art of smoking and the Mediterranean practice of open-air curing. The show will dive into the essential stages of speck production, highlighting its remarkable versatility and adaptability in modern cuisine.
